May 18 - National Cheese Souffle Day!

Hello everyone! A few food - related holidays fall today. Most notably is National Cheese Souffle Day. If you've never had the pleasure of a cheese souffle, it is an eggy dish similar to an omelet, but much more fluffy. They're typically baked in a dish in the oven, and may collapse if not eaten soon after being taken off the heat.


It's also World Arak Day, a holiday created by the Terra Sancta Trading Company to promote the distilled Levantine spirit. Arak is made with grapes and anise, and is very strong - typically 40-60% alcohol by volume.

Lastly, today is National No Dirty Dishes Day, so once you're done cooking, clean those dishes in the sink right away! With that being said, let's get into the menu ideas.

Breakfast

Start off your day with a dish that's eggy and cheesy, but much quicker and easier than a souffle - a cheese omelet! For a complete meal, serve it with your favorite bread, toasted, and whatever fruit you have on hand. If you don't eat eggs or cheese, I found a vegan omelet that I love too, so try it out!

Lunch


As a nod to the anise in Anak, today's lunch features a similar-tasting ingredient, fennel, in a hearty and warming soup. I suggest serving this with seedy crackers on the side, and some simple italian anisette cookies for dessert.

Dinner


For dinner we're having the main event - a cheese souffle! This upscale, retro dish will impress anyone you serve it to, but is easier to make than you might think. Serve this with a vinaigrette-dressed salad and a fresh baguette for a light, beautiful spring meal.
